Pro tip: use gloves and an apron to prep. Beets stain!
Ingredients
- 1/2 lb of beef stew meat, chopped small
- 4 medium beets, peeled and shredded
- 1 large potato chopped
- 1/2 yellow onion chopped
- 1 carrot chopped
- 4 cloves of garlic minced
- 1 tbsp fresh parsley chopped
- 1 (14oz) can of diced tomatoes
- 1 14oz can kidney beans
- 1 (6 oz) can of tomato paste
- 4 cups of beef broth
- 1 tbsp sugar
- 1.5 tsp of dry dill weed
- 1 bay leaf
- 1 tsp of salt
- 1/2 tsp of pepper
Instructions
- Add all ingredients, stir together, cook on high for 5 hours or so.
- Serve with a dollop of sour cream stirred in, and a nice piece of rye or pumpernickel bread

I did it a bit different than the Reddit recipe
- Used a soup pot instead of a crock pot, because the crock pot was too small
- Needs less cooking time on the stove; ~2.5 hours instead of 5 hours
- Added chopped mushrooms
- Used a bag of baby carrots instead of normal carrots; shredded with a cheese grater
- Used an additional potato instead of a beet
Websites caution to use gloves and stuff because of the beet juice. It's not that bad, wash your hands and cutting board soon and it shouldn't stain. Avoid wearing your favourite shirt as shredding with a cheese grater can be messy, but it didn't stain my hands or anything.
